I am now a Nomster! That means I follow Michele Tam’s online blog Nom Nom Paleo. She is a food blogger, recipe builder, and author. Her recipes are easy once you stock your pantry with her favorite umami (savory taste) ingredients – coconut aminos and fish sauce.
For the Super Bowl game I made her version of Juli Bauer’s Sticky Sesame Teriyaki Chicken Wings. We devoured the chicken wings and during cleanup I saved every spoonful of the leftover sauce. This morning for breakfast I made a swoodles with chicken thighs and the leftover Sticky Teriyaki Sauce.
First I spiralized one-half of a White Sweet Potato. I love the texture and look of this sweet potato. It makes a wonderful Swoodle!
I added a couple of tablespoons of olive oil in a hot pan and sauteed the swoodles till they softened and some turned crunchy. Watch carefully and do not burn!
Take your swoodles out of the pan and put into a serving dish. Add a little more olive oil if needed and add the small pieces of chicken thighs to the hot pan. Saute till no longer pink.
Add a couple of tablespoons of the sticky sauce to the chicken. You can find the sauce recipe on nomnompaleo.com
Add to the top of the swoodles. Yum Yum!
